Pointe Viven: Get your Grilled Chicken Sandwich Recipe




Looking for an ideal meal after work?  This grilling recipe is ideal for that night when you need to satisfy your appetite with something tasty and nutritious.  Easily print and take this recipe to the grocery store.

Grilled Chicken Sandwich

Ingredients

4 four-ounce boneless and skinless chicken breast halves (organic)
sea salt
olive oil
1 garden tomato, sliced (organic)
3 tablespoons Greek yogurt
1/4 teaspoon cayenne pepper
Romaine lettuce leaves, cleaned (organic)

Directions

Preheat indoor or outdoor grill, lightly coat with cooking spray.

Clean the chicken with warm water.
Ensure that you avoid cross contamination, clean all utensils, the sink, your hands, etc.
Season the chicken with sea salt and a drizzle of olive oil.
Grill until the chicken is cooked through, five to six minutes on each side.

Mix the yogurt and cayenne pepper in a small bowl.

Build your sandwich:  Place a chicken breast on a plate.  Place lettuce leaves on top.  Place a slice of tomato on top of the lettuce leaves.  Spoon a dollop of the yogurt mixture on top of the tomato.  Top with another chicken breast.

A running joke in the series that pokes fun at The O.C. is that characters will frequently refer to Orange County as "The O.C.," followed by another character's saying, "Don't call it that" (mirroring the fact that many Orange County residents do not use the term "The O.C.")

Pointe Viven: Ideal Summer Drink liked by L.A. Times Food



Looking for something ideal to drink on a summer day or after a workout?  This mint and pineapple infused water is your answer.  I had some ready for friends after we took a hike at the beach.  Print the recipe below and keep in your recipe binder!

Mint and Pineapple Infused Water

Ingredients

10 organic mint leaves (cleaned)
1/4 pineapple (peeled and sliced into triangles or cubes)

Directions

Pour 8 cups water in a pitcher.
Add the mint and pineapple.
Refrigerate the pitcher over night.
Refrigerate drinking glasses over night.

Serving

Strain and pour infused water into cold glasses.
Garnish with a slice of pineapple and mint.

*Tip:  If you have left over mint leaves, place them in an airtight container and refrigerate.  The leaves should stay fresh for 1 1/2 to 2 weeks.

Pointe Viven: Exploring a Taste of Monarch Bay


Monarch Bay Plaza is on a spectacular coastal bluff.  It is a great local spot to shop and eat.  Olamendi's serves some good Mexican cuisine.  I've always had good service from the owners.



Ichibiri Restaurant:  There was a long line of men, women, and teens for this plate.  I enjoyed the rice the most.


Gelson's Market:  This citrus salad was very fresh and grasped the idea of summer.  I would make it myself, only a bit less lemon than was in this one.  Gelson's is a favorite of mine, the store has many gourmet items that you won't find at other markets.  


Pointe Viven: Taboule, taboule, taboule




Taboule or tabbouleh is a bulger wheat mix with Arabic origins.  Popular blends include mint, parsley, garlic, tomato, carrot, and lemon juice.  I cooked carrot with mine in the photos above.  This nutritious salad is an excellent source of vitamins and is a nice option to rice.  Serve taboule and some gourmet cookies from Pointe Viven at your next meal.
