Pork Skewers with Yogurt and Tomato Sauce
I am continuing to cook through Vefa's Kitchen, a remarkable cookbook from Greece. This dish is authentic and rich in taste. It transcends the ordinary week night dinner. Refreshing lemon cookies are a perfect pairing after this meal.
Directions for Pork
2 1/2 pounds boneless pork
pinch of dried oregano
pepper
olive oil for brushing
8 pita breads
5 tablespoons butter, melted (I altered to 2 Tbs. Smart Balance)
1 1/2 cups beef broth (I altered to vegetable)
2 1/4 cups strained, plain Greek yogurt
pinch of cayenne pepper
Directions for Tomato Sauce
3 tablespoons olive oil (I altered to 1)
1 garlic clove, finely chopped
1 1/2 cups pureed fresh tomatoes
1 teaspoon sugar
pinch of cayenne pepper

Thread pork on to 8 skewers, sprinkle with oregano, pepper, and
brush with olive oil.
Cover and refrigerate.
Sauce: Melt butter, add garlic, cook on low, stirring for 1-2 minutes.
Add tomatoes, cayenne, and pepper, simmer 5-10 minutes.
Remove from heat and let cool.
1 hour before serving: Grill pork for 10-15 minutes. Brush both sides
of pita with melter butter and broil or grill.
Heat the broth and tomato sauce in separate pans.
Cut and divide pita bread into individual pieces and plate.
Spoon broth over pita bread.
Slide pork off skewers and plate.
Spoon 3-4 Tbs. of tomato sauce on to pork.
Spoon 5-6 Tbs. yogurt on top.
Sprinkle with pepper and cayenne.
Serve immediately.
