Thanksgiving Ideas: San Marin Cookies and Sweet Potatoes

For dessert I made San Marin cookies, baked with deep, intense chocolate.
For lunch lunch I made white sweet potato wedges.
Before you go thinking white sweet potatoes are South American or Central American, these are all American for Thanksgiving. Looking for a new twist on an old favorite? Or maybe just a new favorite? White sweet potatoes are less sweet than the orange sweet potatoes.

White Sweet Potato Wedges

- Preheat oven to 425 degrees Fahrenheit (218 degrees Celsius).
- Wash the white sweet potatoes to remove dirt and soil.
- Cut white sweet potatoes on a cutting board into thick wedges. (A proper, sharp knife is important. You may wish to cut the potato in half and then into wedges, as this makes for easier handling.)
- Toss with 1 tablespoon olive oil.
- Peel and mince 3 garlic cloves; toss with wedges.
- Sea salt and pepper to taste.
- Place on baking sheet lined with parchment paper.
- Bake for 25 minutes (oven times will vary with size of wedges).
Serve warm.
