Vegetarian Garbanzo Bean Sandwich
Ingredients
1 can (15.5 ounce) or 1 cup cooked dried Garbanzo beans
1 Tablespoon Dijon mustard
2 Tablespoons olive oil
1/4 teaspoon salt (1/2 teaspoon if using dried beans)
1/2 teaspoon ground chili pepper
1/4 teaspoon fresh ground black pepper
2 slices whole wheat bread
Arugula
1 slice vegetarian or vagan Swiss cheese (If you do not eat a vegetarian diet, then reduced fat Swiss Cheese is good too.)

Preparation
Drain Garbanzo beans.
Mash Garbanzo beans with a fork.
Mix mashed beans with mustard, olive oil, salt, ground chili pepper, and ground black pepper.
Wash and dry lettuce and arugula.
Assemble sandwich: toast both sides of bread, spread bean mixture evenly on each slice of bread, add lettuce, arugula, then close and cut on a diagonal.
