Calo has it’s origins in Carmelita’s that was opened in 1962 by Alberto Heredia and his wife Carmen G. Heredia in Roseville, California.  A suburb of Sacramento, California.  Additional Carmelita’s locations were established in Rancho Santa Margarita and Laguna Beach, California.

Thomas Carson is the founder and chief executive of Bear Flag Restaurant Group.  The company has other restaurants located in Newport BeachHuntington Beach, and Pacific Beach.

A Tribute to Culinary Royalty





Long before celebrity chefs, food television, and performance art lifestyle gurus, there was the home cook.  Characterized by love of cooking for the pure enjoyment, love of cooking for family and friends, and meticulous examination of recipes, cookery, ingredients, and presentation.  Home cooks that created down-to-earth dishes, elaborate feasts, birthday cakes, holiday brunches, and more.  Home cooks with all the makings and soul of professional chefs, restaurateurs, caterers, and home experts.  

It was 1984, before the almost lost art of home cookery was revitalized, anticipation of the Summer Olympics in Los Angeles was red hot, and my Aunt Rosemary Schorle gained the attention of Jo Ann Miner, Food Editor of The Orange County Register.  My mom, Virginia, nominated Rosemary as a “Great Cook…with a talent for creating a total and unique dining experience.”  My mom also being a talented cook and baker, as well as many others in our family.  Rosemary’s famed themed dinners, complete with décor, warranted a multi-page feature in the newspaper.





It’s all in the story.  Rosemary’s interest in cooking, as with many home cooks, began in childhood.  She remembered making chocolate eclairs from a cookbook her brother had given her.  Once married she developed more elaborate meals, enhanced by decorative items, such as plates, movie props, wardrobe, photographs, hydrangea flowers, fishing nets, and mannequin pirates.  The treasures used to decorate for dinners all had a story of how she located the objects and about each items history.  Her husband, Uncle Tom, appreciated her hard work and shared her love of a great meal.  Always more important was the quality of food though.

  


As food editor Jo Ann Miner discovered, Rosemary did things with “full force.”  Prior to the dinner with Miner and her photographer, Charlaine Brown, Rosemary prepared the menu, decorated her front yard, kitchen, dining room, and living room.  Complete with a brawl-looking sailor dressed in captain’s garb, “jewels”, treasure chest, seafood restaurant matchbooks, wine bottles, burlap bags, fishing nets, dry ice fog, and barrels.  

An engaging atmosphere enhanced by the sounds of the sea.  Those recorded sounds of the sea came from a trip to Huntington Beach.  As a family we acted as Rosemary’s assistants scouting out the best places along the beach to capture the sounds of waves crashing, sea-gulls, and cool breezes.  This was to be a great seafood feast.

A Kettle of Tall Tales: lobsters, shrimp, scallops, red snapper, vegetables, wine, and herbs

Ripple Emeralds: leaves of chilled lettuce and lemon wedges to cleanse the palate

Gold Doubloons: sweet butter with saffron

Glittering Gold: homemade vanilla ice cream topped with pineapple sauce, flambéed with rum and cinnamon

Blackbeard’s Nightcap: Colombia supremo coffee served with rum topped with whipped cream (Rosemary and I shared a love for black coffee, yet this is a delicious sounding way to wrap-up a dinner.)





As a young kid it was exciting to see my aunt featured in the newspaper.  Observing the photographer setup the lights, the deflectors, and taking test shots.  How exiting to meet Jo Ann Miner and see part of the interview.  A life of cooking and entertaining was almost predestined for her.

Rosemary’s bold mark on the culinary world and among food lovers was a mere byproduct though.  It took her years of dreaming, innovating, and curating to create exotic theme dinners.  That drive to learn, work hard, and use creativity is an inspiration in and out of the kitchen.  Her desire to bring happiness to others, to be of service, and her own personal achievements is the real story here.

She loved cooking, God, her family, being a grandmother, her great-nephews, gardening, and especially decorating for Christmas.  Years later in 2016 Rosemary created one last grand feast.  Her vibrant meal was the one she traditionally served to family and friends that attended for the holiday.  Mexican food with all the side dishes.  As a great cook the food was handmade with love, quality ingredients, and with authentic flavor.  The house decorated inside and out with her vintage finds.  Every room carefully trimmed for the holidays.  “The Queen” had done it again.

Cooking Inspired by Julia Child





No fuss and with a healthy respect for butter and cream.  That is the signature style of famed chef Julia Child.  Home cooks, chefs, and bakers alike were drawn into her television program out of curiosity for how to cook, French cuisine, and simply to learn from a fascinating character.  And people still do.  The continued interest in all things Julia is the foundation for Sur La Table, the gourmet store, to offer cooking classes based on recipes by Julia Child.

Julia Child was a California native from Pasadena.  She later went on to graduate from Smith College, joined the Office of Strategic Services (OSS) during World War II to gather intelligence information, and then attended the Cordon Bleu.  This culinary education gave impetus to write Master the Art of French Cooking and propelled Julia into a television program, The French Chef.





  

One of the reasons Julia Child remains an inspiration and great teacher is that she learned to cook late in life.  She grew up in a wealthy family with a cook.  It was not until her foreign travels and attendance of cooking school that she had to study and understand food, recipes, and cookery herself. 

Julia’s enjoyment of food and revival of home cooking in the 1960s is a lasting legacy and reason for celebrating her birthday through cooking classes by Sur La Table.  “America’s favorite chef, Julia Child helped bring classic French cuisine to the States and in turn inspired a generation of cooks to expand their skills.  August 15th would have been Julia’s 100th birthday, and we’re celebrating her life with this fun, hands-on cooking class.  Our instructor will walk you through the steps of some of Julia’s most popular recipes, including timeless classics from Mastering the Art of French Cooking.”

The class was a wonderful taste of French food by Julia Child.  Chef Sean Kilpatrick two sous-chefs, under-chefs, brought to life Julia’s cookery.  It was an enjoyable experience to talk about Julia, French cooking, menu planning, and recipes with Chef Sean.  We conferred on changes that could be made to some of the recipes, such as cooking asparagus for less time than Julia recommended, and what items could be served along with what we cooked in class.

In the class of sixteen, it was gratifying to be paired with three others that were such good team players, had good senses of humor, and displayed impressive culinary skill.  As a team we shared in the chopping, stirring, and whisking.  We created very flavorful food through good collaboration.  Chef Sean used our dishes as examples for the rest of the class.  Not only were the dishes delicious, each item had a delectable appearance and had great aroma.

Cheese Soufflé (recipe from The Way to Cook by Julia Child) made with finely grated Parmesan cheese, butter, flour, hot milk, paprika, nutmeg, salt, pepper, egg yolks, egg whites, and Swiss cheese.

Coquilles Saint Jacques a la Provençale:  Scallops Gratineed with Wine, Garlic, and Herbs (recipe from The Way to Cook by Julia Child) made with yellow onions, butter, shallot, garlic, scallops, salt, pepper, flour, olive oil, white wine, bay leaf, thyme, and Swiss cheese.

Asperges au Naturel avec Hollandaise:  Asparagus with Hollandaise (recipe from Mastering the Art of French Cooking by Julia Child) made with asparagus spears, salt, butter, egg yolks, lemon juice, butter, and pepper

Chocolate Mousse (recipe from Mastering the Art of French Cooking by Julia Child) made with egg yolks, fine sugar, orange liqueur, semi-sweet baking chocolate, strong coffee, unsalted butter, glazed orange peel, eggs whites, salt, and granulated sugar.

Friends and I are always on the look for good food from family-owned and independent restaurants.  On a recent trip to New York, New York we took the opportunity to dine at Joanne Trattoria.  The restaurant is located on the Upper West Side, steps away from Central Park, shopping, churches, museums, and more.  Perfect for brunch, lunch, and dinner.  The snug restaurant features a front bar, bakeshop, outdoor patio, and an attentive staff.  A terrific setting for lunch with friends or a dinner date.

Germanotta Family Home Made Italian Meals: The menu is consistent with the owner’s point-of-view of Italian cuisine inspired by family recipes.  For example, homemade focaccia, Joanne's meatballs, and Papa G's bone-in chicken, with sweet or hot sausage and peperoncini.  Many sharable items on the menu.  Sharing an appetizer and pizza with friends is ideal here.

My Recommendations

1.  The restaurant is located at 70 West 68th Street New York, New York, between Central Park West and Columbus Avenue.  The location is walking distance from local stores, movie theaters, businesses, Lincoln Center, Strawberry Fields, and Columbus Circle.  Street parking is available.  The restaurant is also accessible by taxi, car service, and subway.

2.  The main dining room in located in the back of the restaurant and is a cozy area.  Make reservations to ensure a table.

3.  Joanne Trattoria offers brunch, lunch, and dinner.  The following were our favorites. 

Fried calamari and hot peppers:  seasoned fried hot peppers and calamari.  Perfectly light and flavorful served with a tomato dipping sauce.  The sauce is amazing.  Tomato with garlic and olive oil.  Save any left over sauce as a dip for your pizza or other menu items you order.

Build your own pizza:  artichoke, arugula, eggplant, mushroom, peppers, onion, spinach, tomato, cheddar, fontina, gorgonzola, mozzarella, ricotta, bolognese, chopped clam, meatball, pancetta, pepperoni, prosciutto, sausage (sweet | hot).

Two showstoppers.  

Create an excellent brunch, lunch, or anytime party meal with these two recipes.

Shrimp, king crab, and avocado salad is given a zing with green hot sauce.  Conquer your nutritional needs, hunger, and menu planning all in this recipe.  A warm sauce on the bottom, consisting of melted butter, fresh lemon juice, and green hot sauce, provides a smooth brightness to the dish.




Jesse’s Bloody Mary is simply what you need to pair with the salad and wow your guests.  Quality tomatoes, fresh horseradish, and the right red hot sauce are the key ingredients.  These Bloody Mary’s will add merriment to your social gathering. 

   
Gringo Bandito’s is a quality ingredient to use in this salad and drink, in addition to other dishes and snacks.  Dexter Holland, of The Offspring, is the founder of the California based company.  “Gringo Bandito has 70% less salt than other major competitors and contains no preservatives”.  The regular red and green hot sauces have excellent flavor and spice.  Enjoy.
